This coffee comes to us through the hard work and effort of the coop SOPACDI from the eastern highlands of the Democratic Republic of Congo that surround Lake Kivu. SOPACDI is fully organic and Fair Trade certified, and is known for producing the highest quality and grade of coffee possible in the DR Congo, Kivu 2. They were the first coop to achieve this grade since 1967 after their formation in 2001, and they are leading the way in reviving specialty coffee in the country as they continue to produce outstanding coffee. Kivu, where this coffee is grown, sits directly on the equator and is one of the most diverse regions in terms of climate, elevation, and fauna. All of this shines through in the cup, as this coffee is rich and complex. As an espresso, look for the layered complexity of a scotch or bourbon, with notes of blackstrap molasses, cardamom, and dates that continue to surprise long after the finish.
