Colombia Luis Jose Arcila Micro-lot - Fresh Crop

This coffee was grown by Luis Jose Arcila whose farm, Finca El Porvenir, is located in the Antioquia region of Colombia, half of which is planted with the Castillo variety of coffee.  The cherries were harvested during the day, then left overnight to ferment in water tanks for 12 hours. In the morning, the coffee is depulped and put in Grainpro bags with valves to allow gas to escape, where the coffee ferments for another 84 hours. After this, the coffee is washed and allowed to dry on raised beds for 12-15 days.

This unique process preserves much of the winey, fruity qualities normally associated with natural processed coffee, while also getting the benefits of the washed process. The resulting coffee is bursting with winey fruit flavor such as berry and cherry, smooth chocolate and cocoa, with a tart acidity throughout.
